Various Mons alumni have gone on to exciting careers elsewhere in the food world: setting up their own cheese shops, leading guided transhumance trips in the Biellese pre-Alps & cooking at some of our favourite restaurants, to name a few. But it’s not often we get to celebrate a former colleague & close friend becoming a published author. That author is Emma Young.

We say former colleague…. Alongside her work as a cheese consultant, Emma also now teaches courses in Cheese Retailing with Mons’ Training facility in France, so she hasn’t strayed far from the fold. This has built on her experience in the cheese room at Whole Foods Market Kensington, cheesemaking at Gringa Dairy and managing the Wholesale department at Mons UK.

It’s a cheese book written from a different angle to many & from the perspective of a professional who’s worked in many parts of the field. Designed as a guide, it looks at the relationship between cheeses around the world from a flavour perspective instead of by geographical location. It shows the taste similarities between a Roquefort from France and a Cabrales from Spain.

The beginning of the book gives guidance on how we taste cheese as professionals and throughout, you learn about the different styles of cheese and their relationship with flavour. It’s written in an accessible way to appeal to all.

If you’re further along, you can learn about new cheeses from around the world that you may not yet have encountered.
