Made at the Gaec des Champs Bons near Lachapelle Auzac by Dominique Chambon.The Gaec has been in the family for 3 generations, originally growing tobacco; the tradition in that area. Farming goats followed a friendship established by Dominique’s grandfather with a Spanish refugee who needed grazing space for his herd. Lingot des Causses is a lactic recipe made with pre-ripened evening milk, plus morning milk, which is mixed & coagulated together. The curd is drained through cloth and ripened for 2 days to allow yeast development before salt is added and it is moulded. Lingot des Causses is a seductive mixture of soft, whipped, mousse-like texture with a creamy breakdown beneath the supple nutty rind and clean, fresh milk, buttery flavours developing a more angular quality as the cheeses age.
